Tony Salto of San Francisco's popular Tortilla Heights restaurant shared these great recipes with us. Each one is delicious,easy to prepare and pairs perfectly with mojitos and warm weather.

  • 5 ripe avocados
  • ½ teaspoon salt freshly cracked pepper to taste
  • 1 jalapeño pepper
  • ½ Tablespoon diced red onion
  • 2 limes


  • Slice the avocado lengthwise around the pit until you can pull it apart. Strike the pit with the blade of a sharp knife and twist to remove it. Score the flesh of the avocado vertically and horizontally with the knife, then scoop the cubes from the skin using a spoon. Put the avocado in a bowl and loosely mash with a fork. Add salt and pepper to taste.
  • Slice off the edges of the jalapeño pepper, leaving the seeds behind to prevent the guacamole from becoming too spicy. Finely dice the pepper, and add it to the avocado along with the red onion. Cut the limes in half and use a lime squeezer to add their juice to the guacamole. Stir and serve.
