Olive Oil Salad Dressing

It's easy to make your own vinaigrette each time you make a salad. Make it in quantity in a glass jar and keep it in the refrigerator. Just let it get to room temperature, shake it up and pour a few teaspoons on your salad. You can also alter and add to this basic recipe of olive oil and vinegar as you please.


  • 1 cup of McEvoy Ranch extra virgin olive oil (or equivalent) or infused oil
  • _ cup of red wine vinegar, white wine vinegar, balsamic vinegar or lemon juice
  • ½ teaspoon salt
  • ½ teaspoon fresh cracked black pepper
  • Variations include adding 1 Tablespoon Dijon mustard, dried or fresh herbs, lemon or orange peel, garlic or shallots


  • Pour all ingredients in a jar, cover it and shake.
  • Drizzle on salads, adding more olive oil and salt to taste.
  • Refrigerate remainder.
