Paul Johnson's Red Pepper Mayonnaise

  • 1 red bell pepper
  • squeeze of fresh lemon juice
  • pinch of cayenne pepper
  • ½ cup mayonnaise

Makes about ½ cup


  • Cut the sides off a red bell pepper and shred the
  • inner flesh side on the large holes of a box grater;
  • discard the skin. Drain the flesh in a sieve, reserving
  • the juice. Mix the shredded bell pepper, lemon juice,
  • and cayenne pepper with the mayonnaise. Stir in the
  • reserved red pepper juice to the desired consistency.
