Pumpkin Bread

My Pumpkin Bread comes from a recipe a friend gave to me when I was 12. I was in charge of making it for Thanksgiving dinners as a kid. It's a sweet bread meant to be served with the turkey dinner. It makes three loaves, so it's fun to give the other two to neighbors as gifts – or pop in the freezer and enjoy later.

Makes 3 loaves

Ingredients

  • 3 1⁄3 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 ½ teaspoons salt
  • 3 cups sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 2⁄3 cup water
  • 2 cups canned pumpkin

Preparation

  • Sift dry ingredients, including sugar, into a large bowl. Form a well in the center, adding wet ingredients and mix for 3–4 minutes.
  • Butter 3 (9- by 5- by 3-inch) metal loaf pans, then dust with flour, knocking out excess.
  • Pour mixture in 3 greased and floured pans so they're half full.
  • Bake at 350_ for one hour. Cool for 10 minutes before serving.
