Tony Salto of San Francisco's popular Tortilla Heights restaurant shared these great recipes with us. Each one is delicious,easy to prepare and pairs perfectly with mojitos and warm weather.
6 red tomatoes, diced
½ medium red onion, diced
1 jalapeño pepper, finely diced
salt and freshly cracked pepper to taste juice of 1 lime
¼ bunch cilantro, chopped
Mix together the tomatoes, onion and jalapeño pepper in a bowl. Cut the lime in half and use a citrus juicer to add its juice to the tomatoes. Mix in the cilantro, add salt and pepper to taste and serve or refrigerate.
