Humboldt Fog

Cypress Grove’s signature offering, Humboldt Fog is an elegant, soft, surface-ripened goat milk cheese. The texture is creamy and luscious with a subtle tangy flavor. A delicate ribbon of edible vegetable ash along its center gives it a distinctive, cake-like appearance.

Wine Pairings

La Crema Sonoma Coast Chardonnay. Other recommended wine styles are Chenin Blanc, Pinot Grigio, Sancerre, Sauvignon Blanc, sparkling wine, and Pinot Noir.

Food Pairings

  • For a simple yet elegant dessert or snack, serve it with honeycomb, pears and a crisp white wine.
  • Place a slice atop a salad of spinach, apple, mandarin oranges, walnuts, cranberries and red bell pepper. Drizzle with raspberry-balsamic vinaigrette.

Purple Haze

The perfect mixture of lavender and fennel pollen gives this cheese a sweet flavor that plays off the acidity in the cheese for a delightful complement.

Wine Pairings

La Crema Carneros Chardonnay. Other recommended wine styles are Cava, Gewürztraminer (dry), Pinot Grigio, Sauvignon Blanc (dry), Pinot Noir (young), and rosé.

Food Pairing

  • Use Purple Haze as a pizza topping along with fennel, sweet onions, red pepper and Kalamata olives.
  • Stuff figs with Purple Haze, warm in oven and just before serving, drizzle with honey. Serve with dry Gewürztraminer.
  • For a simple dessert, drizzle honey over a disk of Purple Haze and sprinkle with roasted pumpkin seeds or sliced Marcona almonds. Serve with a cold rosé.

Truffle Tremor

Truffle complements velvety ripened goat cheese for an intensely flavored and sophisticated flavor. This cheese takes on different characters as it ages. A young Truffle Tremor is firm and white, with a mild creamy texture and floral aroma. A mature version is more complex, with a marbled rind, a gooey ripeness and tanginess that complements the earthy truffles.

Wine Pairing

La Crema Sonoma Coast Pinot Noir. Other recommended wine styles differ based on the ripeness of the cheese. Young Truffle Tremor pairs best with unoaked, slightly sweet white wines such as Vouvray and Sauvignon Blanc. Ripe ones pair with Zinfandel, Pinot Noir, and mature ones match heavy-bodied wines such as port, Sherry, Sauternes, big/full Cabernet and Zinfandels, demi-sec sparkling wine.

Food Pairings

  • Place a small slab of Truffle Tremor on top of a steak 1–2 minutes before it is done. The cheese will become partially melted and spreadable.
  • Serve a slice of Truffle Tremor drizzled with honey and a glass of Monbazillac or Sauternes for a unique and delicious dessert.
  • Added to almost any pasta or risotto dish, Truffle Tremor provides an earthy and elegant complexity.

Midnight Moon

Aged six months or more, this pale, ivory cheese is firm, dense and smooth, with the slight graininess of a long-aged cheese. The flavor is nutty and brown-buttery, with prominent caramel notes. Made in Europe exclusively for Cypress Grove Chevre.

Wine Pairings

La Crema Los Carneros Pinot Noir. Other recommended wine styles are also Chardonnay (unoaked), Sherry (dry), Gewürztraminer (dry or sweet), Cabernet Franc, Côte de Beaune, Zinfandel, Cabernet Sauvignon.

Food Pairings

  • Place chunks of Midnight Moon on a plate with cured meats and fresh fruit.
  • Top slices of Midnight Moon with fig preserves, and skip the bread and crackers!
  • Try in a classic grilled cheese sandwich or with macaroni and cheese.
